In the Pacific, since the canal goes generally from NW to SE. Although if you navigated due east it would be quite bumpy.

The tallest mountain on Earth was, and still is a mountain on the bottom of the Pacific ocean but I can't remember the name of it.
The climbing of mt Everest is irrelevant anyway

Chimborazo in Ecuador, when measured from the center of the Earth. At 20,548
feet it isn't the highest mountain when measured above sea level, but its location
