Three blades makes it a smoother rotation.
However, Belgium uses two bladed turbines; they're cheaper to make.

What kind of turbine are you talking about? Hydropower generation?
Turbines in Jets? I know for a fact there are many many blades in those puppies. Maybe you are talking about wind turbines but it wasn't clear from your post. My guess is you were certainly talking about wind generators, which in the US usually have only two blades but I do see three bladed ones, maybe they lead to smaller vibration problems, kind of like how you get less vibration in a 4 cylinder engine vs a 2 cylinder motorcycle engine and less vibs in an 8 or 12 cylinder engine vs a 4.
