Because of our human faculties, we can all think about possible realities and truths that exist outside of what we can sense with our five senses. All of us. So who are you talking about?

If there were a human being who, for whatever reason [it's your idea so perhaps you need to give an example or scenarion - severe mental illness? Debilitating intellectual disability?], if such a human had to rely only on their five senses and had no other faculties or capacities, would it be fair to judge them in terms of human morality?

That is really quite a strange thing to say!

Apart from the fact that we have far more than 5 senses
would anyone seriously question the reality of UV or infra-red,
both of which can show a reality we cannot directly sense?

IMO I still meet people who think only what they can sense is real. Some forms of materialism. "To BE is to be Perceived."

(ie gamma rays, radio rays, X-rays)
or unhearable sound?
(ultrasound)

Jainism, there's a noble -ism. Respect for all life, including plant life. Extreme Jainists are called "sky-clad" meaning they walk about naked and will not walk even on grass so as not to trample plants. I do not know what they eat--maybe carrion, only from animals which died of natural causes.
