Can someone explain 1 Day Ladder Tournaments to me. Also what stops a 1400 rated players from challenging me?

I assume you refer to the ladder format (next to the tournament button in the browser).

Nothing perevents a challenge from a person inside 10 ranks above yours to challenge you.

But: Most low level players will try to challenge players not very much over thier ability.

Yes they are (not if resigned in the first two moves).

Not sure you can resign a ladder game in the first 2 moves Pondy
I always thought you couldn't refuse a ladder challenge

You can resign for sure.

And I think it is the same as with torunament or clan games .

Select a ladder with time controls that are attractive to you - but do keep in mind that one ladder game can be initiated against you per ladder at any time and you cannot refuse to play. You may enter each ladder once.
