A Game!

I play this game in hebrew a lot, so I am not really sure how it's called in english. anyway, the game goes like this:

first off we chose the first category, for example countrys.
I say any letter I want (for example E, doesnt need to be alphabetical. every new round i change a letter)

and then the first one to post a country that starts with an E (England for example) wins the round.
at first it is very easy because there is only one category, but every new round we add a new category until there are over 30 categorys and its very hard...
