Sauté that up. I used about half large Onion and Bell Pepper, 5 or 6 Mushrooms and 1/4+ pound of Hot Capicola. Tea spoon of butter or so... and a splash of beer or fancy pants it with some cooking sherry if you prefer.
Once you've Sautéed the heck out of that and the mushrooms shrink a little... and everything is a bit caramelized start in on the omelet.
4 eggs and a bit of milk (you know the deal)
Sharp Cheddar Cheese (or your favorite)
In a large pan this makes a pretty thick omelet with the egg alone. Lay about 3 or so slices of the cheese once it gets 'near' solid.
Put the sauté in and fold it over and flip a couple times.
Enjoy with a tall whole milk.
