I want to make bolognese tonight (not ragu alla bolognese, not this time anyway)


I have my......

Ground beef
Garlic
Mixed herbs
olive oil
tomatoe puree
tins tomatoes.

Do i need anything else ? I saw red wine in a recipe, and think i'll throw a little bottle in.

I know this is my second recipe related question, but if you look up a recipe, you usually get a few dozen variants.

I like to put a bit (just a bit) of onion when preparing the meat. Frying it in olive oil with the garlic before starting the meat.

add black pepper, a little chili and you're set. it also needs something sweet with all that tomato, so throw in a spoonful of honey for example.


edit: and yeah, you're definitely missing onion. make sure you cook the chopped onion soft before adding it.

Fresh basil?

Buy an Italian sausage or two, slice open the casing and mix the sausage filling with the ground beef.

Yes, this too. Never tried it with honey. Isn't tomato already sweet?

You need beef stock too. Simmer the browned meat and vegetables in the stock until well reduced.

no, quite acidic actually. some cherry tomatoes can be quite sweet.

it also helps when they're cooked longer. puree always takes time.

Add a bit of milk or cream right after the meat is browned...reduce until most liquid is evaporated....and then add your wine....reduce again.....then your tomato products....I prefer to add my herbs and spices right at the end of the browning of the meat...it helps bring their flavor out a bit more (IMO)....I'd add some onions too...good luck😀

edit - forgot...also - some finely diced carrot...that takes care of the acidity a lot of the time...

It's tasting a little too tomatoey at the moment. That sounds a bit obvious, but i'm hoping there's some infusing to be done here.
