You are misphrasing the question. The question, which also holds the answer once you understand what you are really asking is....

"Why do we want what we DON'T have?" By nature, humans want things they don't have.

"Can't" is just a subset of "Don't"

We DON'T have a lot of things...We CAN'T have some of things we DON'T have.

It is therefore a disingenuous question to segregate only the things we CAN'T have from the things we DON'T have.
