I love gnocchi, I adore them.
They are made of boiled potatoes, flour, egg, butter, salt and - obligatory - grated nutmeg.
And I eat them with cheese and creme fraiche sauce plus plenty of parsley, garlic and chili pepper and white pepper.
But, real Italian gnocchi are in fact demanding: one should have a potato ricer. Ratio of potatoes and flour should be 8:1 in favour of potatoes. But I usually make gnocchi half potatoes half flour.
Anyway I got lazy with time, and now I make fake gnocchi.
I use instant mashed potatoes. When it cools down, I add egg, flour, salt and nutmeg. And that's it.
Only thing I need is to feel the taste of nutmeg on my palate.
I am cheating with the sauce also. I don't use another pan for it.
I just put grated cheese and creme fraiche over hot gnocchi and add white pepper and parsley and stir. And it's done.

Sounds like my wife's potato pancakes. Very similar. She refuses to use powdered potato's🙂 So guess who gets to skin them?
The potato pancake recipe I was taught uses shredded potatoes. These are like latkes. Some people use mashed potatoes, and I don't like these nearly as much. And really, gnocchi is more like little dumplings than potato pancakes.
