Extra sharp Cheddar

I make alot of German sausage at my work.
40 lbs 50/50 pork trim
60 lbs 95/5 beef from chuck
20 oz salt
6 oz black pepper
6 oz garlic powder
64 oz water
Mix and grind then stuff it!

cheeses: stilton, gouda (or some other dutch cheese?) with caraway, onion cheese from sonoma, brie (ile de france).
sausages: artichoke/chicken/garlic (from one of those cajun chefs' brands), jagerwurst, hot polish sausages mass-marketed in convenience stores.
