Mine is ...
Chicken breast wrapped in bacon, cooked in a pan with sliced red peppers, garlic & teriaki marinade. Served on a bed of wilted baby leaf spinach, with mashed potatoes 🙄

Yeah, buy a bag of it, microwave for about 30 secs on high.

Santa got me Madhur Jaffrey's Curry Bible, and I've made a few from that book. The chicken tikka kebabs were easy to make and very tasty. Lots of the other recipes looked very tasty. Enough to keep me busy in the kitchen for a while...

Tuna Steaks, marinated in Lime juice, Lemongrass, lots of black pepper and some olive oil. A griddle pan works best, give it no more than 2 and 1/2 mins on each side, then pour the marinade in and turn off the heat. Serve with egg noodles, mixed with finely chopped bird-eye chillis, kaffir lime leaves and a dash of worcesteshire sauce. Oh, start off with whole asparagus, griddled (perpendicular to the pan) until just starting to sag, then put some butter, rock salt and loads of black pepper on. 😏
I like black pepper. Try it on your toast. Or wholegrain mustard. mmmmmmm😀

Or there is an incredibly simple chicken pasta bake I do for whenever I'm cooking for lots of people. Just cook off enough pasta to half fill a baking tray. Then cook some cubed chicken breasts with some fresh basil and put them over the top of the pasta. Then cover it all with a tomato sauce ( you can use tinned stuff, but it's best to make your own, I'll tell you how if anyone doesn't know), and cover the top of that with a mixture of parmesan, cheddar and mozzarella. Put in the oven at 190 C until the cheese starts browning and serve! With a nice mixed leaf salad and garlic bread. Not exactly gourmet, but really satisfying and easy. You can also do very healthy if you cut down on the cheese, or use a low fat variant.

Phlabibit’s American Chili

Shopping List:


Large Can of Baked Beans (or 2 small cans)

2 Pounds of Hamburger or Turkey Burger (or 1 1/2 Pounds is OK)

Package of Chili Powder Mix (in Mexican Isle of Super Market)

Jar of Hot or Mild Picanti or Salsa Sauce
(about same amount of Baked Beans / in Mexican Isle of Super Market)

1 small can of Tomato Paste

1 Large Onion (Big Fat Yellow Onion or a couple small white Onions)

1 Red Pepper (Not a Hot Pepper, unless you dare)

1 Green Pepper

Preparations:

Open can of Baked Beans and strain / rinse well…. Longer the better.
Mix Beans and Salsa and Tomato Paste with some water (1/2 a cup?) in Large Pan big enough to hold ALL Chili.

Chop all veggies in Large Hunks, you don’t need to dice them fine.

Brown Burger in Fry Pan and drain fat off when totally brown.

Put All Veggies in Fry Pan with Brown Meat. Add Chili Powder and pour water (1/2 or 3/4 cups) over mix and stir it up till veggies start to get soft and water is most gone. (A pan cover may help)

Once that is done combine the 2 in the Big Pan. Keep on low heat and stir. Longer the thicker. Add water if you like, it will cook off!

Eat. Makes about 3 days worth of Chili, or have a big Chili party…

Here's my favourite recipe:
Shelled prawns seared in a pan with sesame oil, sesame seeds, mixed peppers, onions, mushrooms, a bit of chopped bacon, and random herbs/spices. I tried it yesterday and it wasn't bad.

Yes, can't beat the steak...

Now try Green Beans rather than Veggie Heads... Throw in a tablespoon of butter and a couple garlic cloves or Garlic Powder if that is all you have. Green Beans and Garlic is the best!
