It depends on the region (as, I guess, black pudding does) but my favourites are done with mostly blood, a bit of pork belly bits but seasoned with different spices (mostly cumin and clove).

There are many varieties, though... 🙂

I have yet to try a proper black pudding, actually. I had them mostly in breakfast deals...
