"The Pilgrims who sailed to this country aboard the Mayflower were originally members of the English Separatist Church (a Puritan sect). They had earlier fled their home in England and sailed to Holland (The Netherlands) to escape religious persecution. There, they enjoyed more religious tolerance, but they eventually became disenchanted with the Dutch way of life, thinking it ungodly. Seeking a better life, the Separatists negotiated with a London stock company to finance a pilgrimage to America. The Pilgrims set ground at Plymouth Rock on December 11, 1620. Their first winter was devastating. And the remaining colonists decided to celebrate with a feast -- including 91 Indians who had helped the Pilgrims survive their first year. It is believed that the Pilgrims would not have made it through the year without the help of the natives. The feast was more of a traditional English harvest festival than a true "thanksgiving" observance. It lasted three days.
Governor William Bradford sent "four men fowling" after wild ducks and geese. It is not certain that wild turkey was part of their feast. However, it is certain that they had venison. The term "turkey" was used by the Pilgrims to mean any sort of wild fowl. "
this is no doubt where the 'happy bird day' tradition comes from.
unfortunately, there the 'bird' has nothing to be thankful for especially these days.
45 million turkeys are killed each year at thanksgiving. they spend 6 months on factory farms packed in dark sheds with only 3 sqft/bird. to keep them from 'damaging' each other, a portion of their upper beaks and toes are seared off with a hot blade and without anesthetics. turkeys stand in their own waste and the ammonia fumes burn their eyes and lungs. dosed on antibiotics and bred to enormous weight, they suffer from crippling, collapsed lungs and heart attacks. many don't survive past the first few weeks drowning in their water dishes or starving because eating with mutilated beaks becomes too painful.
the road to the slaughterhouse sometimes involves heat exhaustion, freezing, or transport accidents. they are hung upside down by their crippled legs and their heads are dragged through a stunning tank, which immobilizes them though not to unconsciousness. their throats are slit, but not always properly and they end up in the scalding tank (for feather removal) alive.
it is tragic that that the day when we are supposed to be thankful for our blessings, so many sit down to eat these beings who never saw the light of day or took a breath of fresh air. as plutarch wrote several hundred years ago:
"But for the sake of some little mouthful of flesh we deprive a soul of the sun and light and of that proportion of life and time it had been born into the world to enjoy."

What the hell is tofu turkey?...I wouldn't eat something made out of soybeans and called "turkey". Granted, the mass production of turkeys is alfowl (alful), and I'd rather have a wild one that got fat naturally, but with overpopulation of the human species it gets harder to hunt turkeys every year...so I guess it's hormone/antibiotic fed turkey for me this year-again. I deep-fried mine this time and it was deelicious....😏

anyway, we used to do that 'real deal' for years in the 60s - prepare, stuff, baste etc. however, in the early 70s, we started to explore alternatives and found that we were more than pleasantly surprised (for several reasons other than just the fantastic tastes).
below is a tofu turkey recipe we have tried several times. it is quite simple (there are more elaborate variations), but it is pretty easy to create and quite tasty. (it is from the very vegan cookbook that the familycaregiverssupport.org organization created)
5 pounds of firm tofu
Stuffing
4 cups of bread cubed
1 Tbsp. olive oil
1 tsp. oregano
1 tsp. basil
1 tsp. thyme
1 large onion chopped
3 stalks of celery chopped
Basting liquid
1 cup Liquid Aminos (braggs)
½ cup sesame oil
Mash tofu with a fork and place in a colander. Squeeze out the excess water.
Use a heavy pot to press the tofu down. Remove the pot and scoop out the middle of the tofu, leaving a one inch layer pressed to the colander in the shape of a bowl.
Mix stuffing ingredients and place in the tofu "bowl". Cover the stuffing with the tofu that had been scooped out earlier and press firmly.
Carefully flip the tofu turkey by inverting the colander onto an oiled pizza plate.
Baste tofu turkey and bake at 350 for 30 minutes covered then 20 minutes uncovered. Keep basting periodically until tofu turkey until is cooked.
