Yeah, you're right. Skin is the outer layer though flesh contains
the skin and the layers underneath.

So, the title should have been human flesh is leather AND food too

Or
"Human skin can be processed into leather and rather than waste the flesh you could always eat it"
It would have to be marketed as human skin leather because it wouldn't be as durable as bovine leather but it would very popular amongst certain homicidal sociopaths for face masks and stuff.

I'd love to but my publisher has a deadline on me and I cannot
participate in this prestigious, highly important competition.
