I wonder if it would be considered on or off topic were I to say I would like to have immortality. Eternal youth as well, of course.

Would we really appreciate eternal life and eternal youth? Don't we treasure life so much more knowing that we are allowed only a very limited time on this earth?

Tell that to Ponce de León. For his time (15th century) he lived quite a while (I think about 60 years or so) so maybe he actually did find the fountain of youth or at least the fountain of holding back death....for a while.
