They built a toy out of them, and salvaged all vintage parts for sure. If this is not the case, I agree with you... but there is no way they would demo these cars if they were 'full worth' as a collectible.
These 2 cars did NOT add up to a full Delorean... or they would not have done what they did with the 2 cars. Even if they did... they can sell the parts off for more than either car is worth. Give it a try, you could sell most any vintage car on Ebay for more than it is worth if you took the time to do it part by part.
