1. The Alley / Lane can be sloping with many dents along the way.
2. The balls are oftern oval (ish) with many chips and dents etc so they sometimes bounce and swerve without notice.
3. The pins are re stacked by hand for about $5 per hour by a spotty teenager who doesn't care about the game.
Despite this skittles makes a far more interesting game.
The player who scored the least in the previous round re-sets the skittles.

Not if you play in a UK pub league, its usually a son of one of the players or son of the pub landlord......... they are called "stickers ups"

I probably played Dorset Rules at the Fountain in Shaftesbury. Really nice pub if you're ever in that neck of the woods.
