I'm looking for something to cover Chicken legs, or wings. Something spicey. I don't like buying pre-made stuff if i can help it, and being able to make my own tastey chicken barbeque stuff (or oven cooked) would fill a hole in my repertoire.

Thanks in advance. Huck πŸ˜›

The best and easiest marinade for chicken thighs

olive oil - just a bit
dijon mustard - a good spoonful
fresh red chillies - the small kind, seeds removed and cut real small
garlic - loads, crushed
lemon juice - a spoonful
orange juice - 3 spoonfuls
honey - the runny kind, 3 spoonfuls

If you have no red chillies in the house, a huge dollop of tabasco often does the trick πŸ™‚

I like to mix Heinze 57, thick hickory, and some hot sauce. Now you've got 3 pre-made things, but made your own mix from them.

Get crazy and mix a LOT of your favorite mustard in for an orange or reddish brown super BBQ.

If you like Greek flavours, try:

1 pint plain yogurt (Not vanilla!! Just plain.)
the juice and zest of 1 lemon
4 tablespoons of dried oregano
1 head of garlic, crushed
3 bay leaves
a little salt and lots of ground black pepper

Marinate chicken pieces for at least 4 hours, but overnight (or even longer) is best. Remove chicken from marinade and pat dry with a towel before grilling.

I have a similar one for chicken breasts, which I found here recently:
http://southernfood.about.com/library/recipes/blidx.htm

*The original recipe calls for a diced half onion.

4 tablespoons olive oil
2 cloves garlic, minced
4 tablespoons chopped fresh rosemary (dry will work too, just add an extra half table spoon)
1/2 cup fresh lemon juice
fresh course ground black pepper, to taste
grated zest of one lemon

Retain sauce after marinading, bring to boil in sauce pot and use as a baste while cooking / grilling.

* I add one table spoon olive spread / butter to sauce before boiling for basting.
Allow to melt, stir through.
This will help your chicken become a lovely golden brown while grilling / cooking.

Served this for the bf, he enjoyed it and I have to say, it smelled really good.
