Can't be there Phlab, but can contribute :
"skeeters apple and onion salad"
For the dressing you'll need 400g sweetened condensed milk, 1 cup of malt vinegar, 2 tsps dry hot english mustard, 1 tsp ground black pepper and 1 tsp salt.
For the salad ingredients 4 large tart apples (granny smiths if you can get them) and 4 large red onions.
Make the dressing first by beating all the ingredients together in a large bowl and store covered in the fridge. It'll keep for 3-4 weeks .
Peel, core and finely chop the apples and put aside in cold water ( to stop them browning) Peel and finely dice the onions and put them in the serving bowl. Drain the apples, dry wrap in a tea towel and put them in with the onions. Quickly stir in half the dressing and test the consistency - the apple/onion should all be generously coated but not too runny. Add more dressing if it's a bit gluggy. Store covered chilled until the party. It can be refreshed by adding a little more dressing with a squiz of lemon juice and gently stirring through. Will keep for weeks as well.
