I just found an amazing piece of kit. It's called PDF2Word and it does exactly that in the flash of a second!
So now when my clients send me PDF files I can't adjust - well now I can! hahaha 😏 , and send them back as PDF and say "You wrote it!" 😀😀
Adobe - you have a problem!! 😛
