It seems every region has it's own potato salad. Here it's boiled and cooled potatoes, eggs if wanted, mayo, mustard, dill pickles and chooped onion.
In the American South, they use a sour cream base. Germans have a potato salad that is in a thin vinegar base and served hot.

I have 2!
First is the traditional cold salad, lite mayo, egg, chives, onion & a little garlic... Smelly but good.
Second is a baked version, fresh cream, a little flour to help solidify, tiny amount of garlic, a little aromat and topped with grated cheese. VERY rich, very good.

My favourite is much more simple. I think it's a British classic, but simply potato, Hellman's mayonnaise and some chopped spring onions. The Hellman's makes it.
