Scoop out the potato, cook the skin till it's nice and crispy. They're good. Baked, I think. Usually filled with cheddar, bacon, clives, and maybe a dollop of sour cream.

Personally, I think it's cruel, but I'll leave my personal politics out of it for now.

to elaborate: baked tater, cut in halves, innards (most) scooped out, topped (filled) with cheddar and crumbled bacon, back into the oven for a tick, then served smothered with sour cream,mmmmmmm, sour cream.
