Oyster stew comes to mind. I was the saddest person in the world when I became allergic to shellfish! The hardest to give up was fried oysters. Anyone ever taste Ivar's clam chowder in Seattle?......I would probably eat it if it were offered to me even though I'd never live to digest it. I lived across the bay in Bremerton and the surrounding area for 31 years. Miss that wonderful fresh seafood.

Homemade potato soup and homemade tomato soup are two more old North Dakota standbys.

Soupa Avgolemono:

8 c. veggie stock
1 c. orzo (I use 1.5x this)
4 eggs
juice of 3 lemons
fresh ground black pepper.

This recipe will make a perfectly balanced salty, rich, filling, comforting soup.

Store-bought veggie broth is pretty bland. Salt to taste or add some boullion. Boil broth, add orzo and simmer until tender - about 20 min.

Beat eggs with lemon juice. Temper eggs with 2 c. broth, adding in constant slow stream while continuing to beat furiously so you do not curdle the eggs.

Add egg mixture back to remaining broth, beating well as you add it and serve.

When reheating, do not re-boil - heat slowly until very warm or you may curdle the eggs. Garnish with thinly sliced lemon. I sometimes add more than juice of 3 lemons, as the sourness is the best part of the taste! You should taste lemon, richness of eggs, salt of broth, and starch of rice, in that order and you've made it perfectly.
