Olive oil
Balsamic Vinegar (my prefered choice)
Garlic
salt and pepper.

..............................

My simple but tastey vinaigrette. I tried to add Thyme the other day, to see if it would be nice, it was ok but nothing special.

It's summer here, and i'll be eating salads a-plenty in the coming months......Give me some ideas for a good vinaigrette.

Thanks in advance. ๐Ÿ˜›

Try a bit of honey dijon/dijon mustard.

When I'm making a vinaigrette, I start with 1 part acid and 3 parts everything else (oil, mustard, herbs, spices, etc...) by volume and then adjust as necessary from there. It'll always come out nicely if you take the time to taste it, and make sure it's balanced but punchy and flavourful.

Since it's summer, try adding fresh fruit like raspberries or blueberries. They're usually helped along by a pinch of sugar or a dollop of honey. And while you're at it, why not try substituting apple cider vinegar or lemon juice (make sure to add the zest)?

Lime works well, too.

I'm not sure. Depends on how well it would dissolve and blend. Also depends on how flavorful it is. Honey dijon would seem to work well because you get the nice flavor with a little sweetness to balance it out.

a bit of crushed rasberries works nice, also (not with berries of course) a dash of chili powder for a santa fe type salad

You can also use different leafy greens like arugula/rocket or cabbage, add whole fresh herb leaves like basil or mint, or make the salad out of something else entirely like shredded fennel, apple matchsticks, orange slices or shredded carrots.

Once you pick the salad type, pick a vinaigrette to match. Apple and fennel salad with lemon juice/lemon zest/olive oil/mustard/shallot/toasted fennel seeds sounds pretty good.

Hell, if I had salads everyday, I'd be skin and bones, no wait...๐Ÿ˜•

Absolutely! No salad dressing without dijon mustard! I had the variety with honey once because I couldn't get the other one, but I find it too sweet.
