Very very old Gouda. No cheese can beat Very Old Gouda .... it's a bit expensive though.

It depends what I'm eating.
I don't like cheese on its own.

On pork I like melted blue cheese (god knows what it's called)
Through pastas I prefer parmasam (or however you spell it)
On burgers I really want chedder.

I like many cheeses.
The french have a lot of nice ones but they are all soft. I think I'd hanker after hard cheeses if I lived there. At the moment I have a thing for Jarlsberg and Leerdammer, but I like feta, dolcelatte, stilton, smoked cheese, etc.

Probably a good moist Moutain Gorgonzola, although I like sooo many different ones. Also special mention to a decent Double Gloucester with nettles and chives.

Lovely wet fresh Napolitan mozzarella (buffalo milk) cheese
or the smoked version Pavola with fresh stone oven bread

or Cumin Gouda from Puhoi in New Zealand with sundried tomatoes in olive oil, rice-crackers and a Matakana Pinot Noir pref at a picnic by Martins Bay on the edge of the Hauraki Gulf. Makes you realise life is pretty good.
