Because he has a French name.

(Sadly, that's probably part of the reason... and sadly, there's another, much more obvious part.)

He's not the Red Baron, I know, pretty sad really. I've read the Red Barons book, was quite good.

The 2006 movie Flyboys loosely portrayed Bullard and his comrades in World War I.

In 2012-2014 the French writer Claude Ribbe wrote a book on Eugene Bullard [32] and made a TV 52' documentary.[33]

seems like there were films already?

I missed that but there seems to have been much more to his life than WW1.
Club owner in Paris.
Volunteer in WW2
Getting wounded (again)
Escaping to Spain.
Getting beaten up by New York's finest.

A biopic would be fascinating.

Maybe the Ribbe book and docu would be a good starting point?
Though I presume they are only in French (at least at Amazon.de)
