I'm looking for recipes to make Baked Patatoes.

The most simple recipes are welcome, but the more complicated ones are also welcome.

Well theres no much to baked potatoes, realy. Some time in the oven, aproximately 80 minutes, depending on size and the oven youre using at around 220 c. check up on them once in a while - I seldom use recipies so I'm not sure of the exact minutes.

The secret lies in what you use as diping for your baked potatoes, I'm usualy lazy so I just take some half melted butter mix it up with garlic and parsley (? you know that green stuff, not sure of the name) and just a litle bit of granulated feta and a bit of extra salt. Then freeze it again and its ready to accompanny your baked potatoes. Jummy.

The secret to cooking roast spuds is in the preperation.

Potatoes ideally should be table onion size. Peel, cut in half and place in boiling water ( blanch ) until the boil point returns. Remove, dry thoroughly and place, flat side up initially, in 1/2 inch of pure beef dripping already preheated to 180'c in a fan bake oven for approx. 20 mins. Turn ( flat side down ) and cook for a further 15 mins.
Test with a knife which should pass easily through and then remove from dripping and place back in oven reduced to 90'c for 15 mins. Result -crisp skin and hot white tender flesh. Serve with lashings of pure butter. Enjoy

A Dutch friend of mine tells me it's common in the Netherlands to eat fries with mayonnaise - which is pretty much unheard of in Australia - is it a common practice in Belgium too?

I really think you are mistaken on the temperature. Let's see, 80 minutes at 220 C would maen either you have a little piece of carbon or a potato the size of Idaho.

Potato the size of Idaho naturally - what size do you use ? 😏

I Might be wrong though - or have a defect oven - as I stated, dont use exact minutes from recipies, try to look at the food instead of the clock.

sour cream and chives would be the classic baked potato topping, i think, but anything that involves melted cheeese is good too...

That's funny... heaps of people in New Zealand (well, Wellington anyway) eat their wedges or fries with mayo. Usually tomato sauce, but often mayo as well.
