You ever create a tournament with the opening moves already made?
Example:
Particular variations of say the King's Gambit or the Bird?
Everyone would begin the game with the opens moves that give it's
name. Each player would or could play both white and one as black
against each person they play.

They are called "Thematic tournaments" and have a "T" next to their name. many of them are ongoing, just check the turnamantspage!
