I remember from somewhere that the maximum allowed moves in a game is a total of 75 else it is a stalemate...is there truth to this. I have a game that is close to it...if anyone has the answer to this question send a message my way.

Never heard of it. Many chess games have gone much longer than 75 moves.

Dunno if you're referring to the 50 move rule?

Basically that states that if there is no pawn movement or piece capture for 50 moves, then the game is a draw.

Is this an instant draw, or can the players choose to play on?

For a few years, the U.S. Chess Federation had a special rule for clocks with a time delay, where after 175 moves (not 75) the game was drawn.

That rules has now been abolished, I think.
