the unbuntu suite, not sure where they are at now (gusty mabye) had an excellent chess game built in!

For the graphical interface, I tend to go for eboard:

for debian there is a packet called scid which comes with an engine. also crafty fruit and toga2 all work i believe. or if you're adventurous you could try running rybka through wine. your computer might not be happy with you though.

scid is dead. ChessDB is the fork you need to worry about. Very good program.
