I love to play the Danish gambit. But I don't play it against strong opponents because, played correctly, black can exit the opening with excess compensation for the lack of development.
But if black gets it wrong, white receives a dizzying array of attacking opportunities and a tactical advantage well in excess of the two sacced pawns. Fun, fun, fun!
There are some good rebuttals to the Danish Gambit, but I'm not inclined to publicize them. 😀

If you play the Danish in a decent tourney you will get refuted out of your booties.
I only play it against players here that are rated under 1450.
Any one higher up and you just die 3 pawns down..
Now I will actually be the first to answer your question.
If they dont continue to take the pawns your Knight should capture the last pawn. You dont have the viscious attack anymore but you have open lines.
