I think the knight is excellently placed as it is. The sole weakness in Black's camp that White may be able to take advantage of is the backwards d6 pawn. You should have doubled rooks on the d file and then determined whether an f4 push is feasible (with the idea of e5 or Nxh) before agreeing to the draw.

bXa is also feasible although more dangerous (as it gives black some chances of play down the a file) and after KXa you have another target at b6 and the Knight can go to d5.
On balance white has the chances here and it is worth playing on and making black prove the draw.
white is practically playing a piece up.
I would first (otherwise black can close permanently) open up with bxa6, then get the knight to d5 and it would pretty much be over I think. I can't see the black a-file counterattack. the black king and d6 are badly in the way, and black would need some serious shuffling to sort that out. I don't think black has the time.
I don't do draws though, I'll rather risk it every time. so if you're a drawing kind of guy then maybe a draw was okay.
