Well for Bc5 there is the evans gambit. Na5 is the master move, but banx99 likes to play out the Fried Liver. As for Be7, is that the hungarian or something. Personally i have never seen someone play it, but it looks like it will just transpose to a philidor?
I play the Ruy Lopez constantly, as White and Black.
As White, I try to follow the main line of the various defence set-ups that Black can think of. For that, I refer to the John Emms's book, "Easy Guide to the Ruy Lopez".
As Black, I play, either, the Moller/Arkangelsk or, preferably, the Open Ruy Lopez. For the last one, I refer to the Glenn Flear's book "open Ruy Lopez". Specially, if allowed, against stronger players, I'll go for the Riga Variation of the Open Lopez.
i like endgames...i don't like the ruy.... i like ...d5 ignoring the bishop and continuing play on the center is usually the most ruthless cure to the ruy, should white get ballsy and trade, your doubled pawns on c file only cause white more problems with the new real estate grab after d5... black then gains initiative and central control.
