If you search Caro Kann there, it has a lot of games for most of the variations. You'll need fritz or some other viewer (maybe Arena if you want a free one) to look at the databased games.

As for playing the Caro, there are only a few main lines you're going to run into, but on a correspondence site like this the book lines can go really deep.
IMO playing the Caro in correpondence chess is easier than playing it otb. It's a slow opening, fairly safe for black, but you're cramped and usually behind in development for a long time. It's not favored by aggressive players as black for that very reason.
Look up these variations for the main ones you'll see here and OTB:
Classical variation
Panov-Botvinnik variation (also called the Panov Attack) (very annoying IMO)
Advanced variation
Fantasy variation
Hillbilly Attack (yes it's a real opening)
Bronstein-Larsen variation
All of these have sub variations under them, but compared to most openings (like the Sicilian or French!) there aren't that many.

It's a reasonably solid opening, avoids the "French Bishop" (i.e. B on c8 getting trapped behind the e6 pawn) and usually does not require reams of theory to play reasonably well. I've used it some success against players I know have a tendency to be hyper-aggressive and are likely to over-extend themselves.
The down-side is that it tends to lead quickly to drawish games.
