This is the easiest one I can find - almost everyone can solve this. It's from Oscar Wilde and I wish I'd said it first. It contains several of the easy pattern words: PEOPLE and ALWAYS and THAT and even provides a single letter which of course only has 2 options one of which is capitalised.
