It's possible, the site can handle it; in fact there have been zero timeout tournaments if I recall correctly.

The problem is that the New Game interface is overly restrictive; it currently uses a dropdown list to enter these values. It should rather simply allow entering any number from 0 to n, so the same flexibility is available to non-tournament games.
