Thorns and thistles coming up instead of useful vegetation to eat suggests things which previously had usage were transmuted to be a nuisance or generally perverted from their previous blessed usage.
Marijuana, poison ivy, poison oak, rag weed, and other things in nature could be transmuted life forms which before had some more beneficial purpose to man in Eden's paradise.
God still supervises nature but the curse's effect constantly reminds man that things are not as they should be.
