They're delicious. I don't fix them very often, because I think I'd drop dead of a heart attack if I did. I don't have any great variation, but I would say that the secret is making the sauce from scratch. The packaged stuff just doesn't compare. A double-boiler helps to make this a little more idiot proof--which is critical in my case. 😛

Reminds me of the (haunted) Henderson Hotel in Empire Junction, Colorado, sitting on the deck looking out at the nights heavy frost, a plate with generous helping of the touted "eggs B." and a very large Bloody Mary with a slice of dill pickle sticking up out of it. That should be the end, but no, crab legs and another Bloody M., but this time with a stick of celery in it. Brunch High Country style, but the Eggs Benedict are part of the Sunday Morning Ritual. This was a long time ago when we were doing the second bore of the Eisenhour Tunnel, the Johnson Bore and then on to the Oil Shale Project back during the gasoline shortage. Can anyone guess what year.

That sounds like about 1972. I was just a little kid back then.

The eggs B were fantastic. It was late fall and it took many Bloody M and good conversation to make it good though. The reason for the running on about it-------it was my introduction to Eggs Bennedict. I had never eatten them befor that experience. Needless to say, I have become an appreciative saviorist of the touted EB ever since. Plus it was a great way to have the introduction. I'm sure there are many out who have had like experiences with a first time food delite. It might prove an interesting thread.
