You can try sprinkling a little watercress, black pepper or mustard seed on top - that gives it a bit of an extra bite.
I don't make them strictly 'correctly' with hollandaise sauce (because I can't seem to get it quite right, and even then I don't really like it that much), but I make it with a decent mornay sauce substitute.
Last week I made a sauce with just a touch of leftover beer (no ale unfortunately) in and then put the bennies under the grill for a minute. It was a strange fusion of rarebit and eggs benedict and it was DELICIOUS!
This may not satisfy every taste, but some weekends I indulge myself with eggs a la seitse.
Well, that's not the name, but I've never seen them out of my place. It's basically to boil eggs and remove them a couple of minutes before going hard, so the yellow is runny.
Then I remove the shelf, place them in a cup, squeeze half a lemon and add some salt. Then I smash them a little bit with a spoon.
Simultaneously, toast some bread, then add butter and jam on top, and place a spoon of the egg concoction on the part of the bread you'll bite.

I had to look up Eggs Benedict, I had never heard about it. It doesn't look familiar either, and I have no idea if there's a German (or Norwegian for that matter) word* for it, or for something similar (we don't even have English muffins, so to do the exact same thing would be difficult). It doesn't look like something I'd miss, though...
*Edit: I looked it up - dict.leo.org says they are "pochierte Eier auf einem Brötchen mit Schinken und einer Art Sauce hollandaise". So no German word for it, I guess!
Love Eggs Bennie... although I usually have an "old" cheddar sauce and calabrese toast rather than english crumpets...
Better, though, by far, but even fussier to make, is a Grand Marnier Souffle... 😲 Eggs from Heaven! 😉
Both dishes are excellent with a glass of decent Bubbly (...not necessarily Champagne) particularly if you've recently sworn off tea or coffee
