...you would find san diego a nice town to visit...swim in the morning and drive to julian inland to find snow...old town cafes and bars...some little red
trolleys...a trip to the border to look down over the great wall...a wonderful
museum park called balboa...some theater...nice people...

If you want something more upscale, (ie $$$$) check out the smaller islands like Aruba, Barbados etc.
Stay outta Mexico 😵
Go last minute and save a tonne. Oh, and dont' go less than a 4 star hotel and make sure it's all inclusive.

Some nice Mayan ruins to tromp through, but be careful of natives in their native Mayan costumes, they want money if you take their pictures. You might feel like paying them, they do have colorful outfits. There is some cultural thing there where the natives sit on top of a pole about 100+ feet high like a lookout on an old 4 Master, and they have this ritual up there, they charge you to take pictures but if you pay, and want to get the pics you need a telephoto lens to get any detail. There are also big Iguana's wandering around, nice beaches too.
