I read "swimming would be great" to mean it wasn't essential. There'd be plenty of outdoor activity, and chances to go caving too.

Thailand is amazing. Ko Pha Ngan was amazing in 2003, and Simillan Islands is heaven on earth. Tiny archipelego in the middle of the Andaman ocean. Unbelievable place for a 3 day dive/snorkel trip.

Brazil is really nice, Salvador De Bahia (while being one of the most dangerous cities I've ever been in), lives and breathes music and dance, has beautiful beaches in town, class national parks just outside, and some supreme little fishing villages to the south. Islas Grandes near Rio is another good choice, but fairly touristy.

Cambodia has some decent snorkelling, and some amazing recent history. Malaysia is an amazing country too. Don't let the fact that its a muslim country put you off. You can have a few days in the central highlands and a few days on the east coast snorkelling, etc.

Australia is an obvious choice. Frasier Island is unmissable.
