The should rename it International Nag the World Day which more accurately describes the scope of the event, and then let everyone have a go: Jew, Mohammedan, Gentile, or Muppet...

Millions have been killed all over the world. Most of them were not Jews. I suggest Genocide day is a good idea and we should all stop being racist or exclusivist about any particular group that was destroyed above all others.
You're right, millions have been killed outside the Holocaust.
But the Holocaust shouldn't just be remembered for its victims but also as a warning for what the human race can do to their own.
And in terms of organised and efficient mass murder the Holocaust is unique and should therefore be remembered uniquely.
It has bothing to do with racism or exclusivism.

As for the possibility that it warns people about the atrocities that man commits against man, I can scarcely remember a week during my life when the Islamic Middle East -Palestine and Jewish - Israeli embitterment has not been mentioned in the newspapers for violence from one group against the other group. OK. I read the article, and it didn't say anything about 'getting rid of Holocaust Memorial day because it is offensive to Muslims'.
It talked about replacing Holocaust Memorial Day with a more inclusive 'Genocide Memorial Day', taking account of the various groups who've suffered genocide.
This is not an idea which I'm that impressed with, but it is nothing like how you originally described it.
Either that, or you take a leaf out of history's book:
