You are right also about ground beef, not only is the outside mixed with the inside, ground beef has a greater surface area, and beef decays from the outside inward. "Store trim,' or the meatwith fat or membranes ( silver skin is a term butchers use} trimmed off with when making cube steak or stew meat, is mostly the outside, so it decays very rapidly. Turning dark in 24-48 hours usually. Ground beef made from only the inside meat will stay bright for almost twice as long.

* You know, like surgery, remove the "bad stuff." Trim and throw away dark meat, hemorrhaged meat, dirty meat, gross stuff in meat, and the surrounding area.
