There are thousands of recipes out there, most of them quite decent.

But don't forget the following bits of truth:

(a) Guacamole is simple. Americans tend to TexMexize stuff and screw it.

(b) Don't fall for the above scam: onion, tomatoe, green chile, cilantro, comino, salt, pepper and lemon always do the trick.

(c) Never forget the drops of lemon!

(d) Do it at home, don't buy.

(e) Eat it the same day, please!

In Mexico there's only lemon (limón, i.e. the green, small one) and the "lime" (lima) is yellow and bigger. The small, green one must be used.

You can buy limón potato chips as well. Rather tasty! Not sturdy enough for guacamole, though.

That would be gross. I used to live in Avocado country, up the side of Mount Palomar, groves everywhere. Now all condo's of course.
