Naturally occurring free glutamates (i.e. MSG). It's delicious!

Dim sum is considered breakfast food in many Chinese cultures, and they always have soy sauce on the table. Get thee to a dim summery!

(BTW, I'll never understand chicken feet...deep fried so the fat goes crispy - YES! - steamed so the fat stays soggy and sweaty - NO!)

Let the blood dry down (turning a soya brownish/black), reconstitute with some water and voila...homemade soya sauce. No muss, no fuss and it's all natural.

Squid blood? Are you serious? Blood, not ink? I don't remember the squid I handled 'back in the day' having a lot of 'blood' in them.

Come on Phlabs think a minute will ya. The squid you handled 'back in the day' (out off the point at Provincetown) had been dead for a long while and it's blood had already been taken by the folks at the Happy Kitchen Chinese/American restaurant( we specialize in special sauces) and made into soya sauce.

look for Great Wall brand dark rice vinegar at the asian store. that is the good stuff, for fried potstickers. tall green bottle with a red and white label.
