natural selection made fruits sweet (so birds will eat them and thereby spread the seeds contained inside), but nade nuts bitter (to make them unattractive to animals that might eat them - if you crunch up a nut it ain't gonna grow).
wild almonds, for example, are usually poisonous - even a few can be lethal to a human. they are only edible now because when they were domesticated (ie farmed) 'mutant' varieties were chosen that didn't produce the bitter chemical (which becomes cyanide when ingested).
