I'm pretty sure Brillat-Savarin is dead by now.

As for curry, I like Garam Masala seasoning once in a while, as well as Indian yellow curry and a few of the Thai curries (green, yellow, Masaman).

When feeling energetic, I grind my own spices for curry, saute them in ghee and garlic which makes a great base for my favorite Aloo and Bhaji.
