Being the wee food conaseur (that is seriously spelled wrong. Let me look it up for y'all: connoisseur)...let me start again...

Being the wee food connoisseur that I am, let me offer a few toasted sandwiches which are really, really good....

Smoked salmon on toast (Scottish salmon, obviously)

Take the salmon out of the fridge. It needs to be room temperature before you eat it (that takes about 10 minutes).
Make scrambled eggs (with milk, not water)
Toast two slices of bread, put a slice of salmon on it, add the scrambled eggs, salt and pepper to flavour and top it off with the second slice of toast.

Garlic chicken on toast
Take a slab of chicken fillet. Cut it so that you get long, flat slices. (So you're basically slicing layers off it).
Put oil in the pan, get it good and hot. Chuck the chicken in. As you're frying, put on the toast.
As you're frying add pepper and garlic. Preferably fresh garlic, but garlic powder is okay (and less messy).
Put the fried chicken on the toast and add salt to flavour.

You can do the same with steak, but instead of garlic, add essence of truffel.

Mackrel mayonnaise
Get a smoked mackrel and take the flesh off it. Make sure you don't have any bones. Add mayonnaise and chopped up onions to it to make a sort of pate. Add salt, pepper and a wee bit of garlic. You can spice it up with tobasco sauce or whatever.
Put it on toast.

Yummy.

Generally I accept every marriage proposal that comes my way, but I'd be too frightened you'd put all my short-comings on a list and post it for the world to see πŸ˜‰

i love to make veggie curries and the left overs make excellent toasted sandwiches for lunch the next day. dry channa daal toasties are my fave (split chickpea curry) πŸ˜€

1 lb channa daal
1 onion
1 tsp mustard seeds
grated ginger and garlic
chopped green chilli
1 tsp turmeric
1/2 tsp garam masala (for garnish)
1 tsp cumin and coriander powder
fresh chopped coriander leaves (cilantro )
10 tbs oil
1 tsp salt
1/4 pt water

soak the daal in hot water for an hour. wash and drain.
heat oil in pan, add mustard seeds. when they pop add the channa daal
add all the spices and onions, mix and add water.
cook on low heat for about 30 mins, or until daal is tender.
garnish with coriander leaves before serving
