Also, if you do cut yourself with a sharp knife, it's a clean cut which bleeds well and heals well. When you cut yourself with a blunt knife, you get a less clean cut, which takes longer to heal and doesn't bleed nicely, so it tends to gum up, and it leaves a scar which itches and aches for weeks.

FWIW, you are more likely to cut yourself with a duller knife than a sharp knife.
I also have a cheese slicer that is very good if you want to slice off just a thin layer of skin with maximal bleeding.
