Meats: Steak-with mushroom, onion and gravy, chicken breast-with ranch dressing, Deer meat fresh off the grill, meat balls with cheese and ragu sauce, hamburgers with cheese-lots of ketsup/ no bread!, chicken wings-lots of ranch dressing, spare and bbq ribs-lots of bbq sauce, pork chops-with ranch or A-1 sauce, Ham with tomatoes and onions, on occasions- faieta-sorry misspelled :'( , assortment of any kind of fish, boiled shrimp, crab legs, lobster tails, some sushi-when in the mood, etc.
Other: Salads with lots of ham, cheese, etc. , variety of different omelets, home made beef jerky, pork reins, always some veggies-not to much though!
Can anyone from the US confirm whether you have many curry houses over there ? Chicken Tikka Masala has apparently taken over fish and chips as the UK's No 1 takeaway food, and curries generally are far more widespread than Chinese or even KFC......

Chipotle Salsa
(Adapted from Maria Elena's Mexican Cuisine)
The secret to this sauce is to simmer it until it is reduced to a lovely thick consistency. Serve slightly warm with good quality tortilla chips!
1 tsp. olive oil
1 clove garlic, minced
2 tbsp. onions, minced
1/2 cup low salt chicken broth
3 Roma tomatoes chopped, or use 3 - 4 canned tomatoes, chopped, if fresh unavailable
2 tbsp. tomato sauce
2 small Chipotle Moritas, stems and seeds removed, chopped or substitute 1 1/2 tsp. flakes
Salt and pepper
In large, shallow skillet, sauté garlic and onion in oil. Add rest of ingredients and simmer 10 - 12 minutes or until thickened and most of the liquid has evaporated. Season with salt and pepper if desired.
Yield: 3/4 cup. If you double this recipe, don't double the chipotles unless you really want it to be HOT!
This salsa can be frozen and reheated as a pizza sauce, or quick pasta sauce, or served with grilled chicken.
